In The Kitchen with Joel & Nikki: Fruit Salad, Cheesy Cauliflower & Ramen Noodle Salad

DETROIT LAKES (KDLM) – Joel and Nikki share some of their favorite recipes. This week, Joel shares his Fruit Salade recipe, Nikki shares her Cheesy Cauliflower recipe and Carmin had a recipe for Ramen Noodle Salad

 

Joel’s Fruit Salad Recipe

  • 1 package vanilla pudding
  • Heavy whipping cream, I add sugar to taste, and vanilla extract.
  • Fruit : Honeycrisp apples cored, diced into cubes, Banana’s, Mandarin oranges, Strawberries, Green or Red seedless grapes, cut into quarters.
  • Mix pudding with the whipped cream. Add fruit, serve!
  • If you have kids and want to have some fun, you can add food coloring to the pudding, and whipped cream.

Cheesy Cauliflower

Ingredients:

  • 1 head of cauliflower
  • ¼ cup ½ & ½
  • 2T butter
  • ¼ cup parmesan cheese
  • 2t salt
  • 1t pepper
  • 1 cup cheddar (or your choice) cheese
  • 2-3 slices of bacon (crispy)

Directions:

  • Boil or steam the cauliflower until a fork slides through easily – drain
  • Add to oven/air fryer safe bowl
  • Use a fork and chop through the cauliflower until it’s in small pieces
  • Add all ingredients except for bacon and mix well – careful not to mash the cauliflower
  • Place in oven at 400 for 20-30 minutes or until brown and bubbly (or place in air fryer at 400 for 10 minutes or until brown and bubbly)
  • Crumble bacon over top if desired. You can also sauté bread crumbs in butter for a crispy, buttery topping for a vegetarian option

Ramen Noodle Salad 

  • 2 packages ramen (I prefer beef)
  • 2 bags cole slaw
  • 1 ½ c oil (I use canola)
  • 1 or 2 bundles green onions
  • 1c sunflower seeds or slivered almonds, or your nut preference

Directions

  • Smash noodles and set aside In a big bowl, combine cole slaw, all of the onions sliced to your liking and nuts
  • In separate shaker mix oil with both packets of ramen flavoring. Shake well and set aside.
  • Just before serving, add in smashed noodles and as much of the oil dressing as you prefer.
  • Toss well and enjoy
