Health officials are warning Minnesotans about a multi-state outbreak of Shiga toxin-producing E. coli O121:H19 linked to organic carrots. Five Minnesotans aged 15 to 44 fell ill between September 21 and October 6, with one hospitalization. Nationally, 39 cases across 18 states have resulted in 15 hospitalizations and one death.

The outbreak involves organic carrots sold at Costco, Target, and HyVee under brands like Good & Gather, Bunny Luv, and Cal-Organic. Grimmway Farms issued a recall on November 16, but the products may still be in homes. Officials urge consumers to check refrigerators and freezers and dispose of any recalled carrots.

Symptoms of E. coli O121 infection include stomach cramps, diarrhea (often bloody), and low or no fever. Severe cases can lead to complications like kidney failure. Anyone experiencing symptoms should contact their healthcare provider. The investigation is ongoing with the MDH, CDC, and FDA collaborating on the case.
