One of our favorite things to do once the kids are in bed is eat…usually something that we shouldn’t be eating at 10 o’clock at night. We go back and forth between making something that the kids really, really like that we don’t have to share with them or taking advantage of making something that they would complain about if we made it for them.
Enter the Jalapeno Popper Pizza. A thick layer of cream cheese sauce, topped with crispy bacon, melty cheese, and spicy jalapenos. This pizza is full of things the kids hate, but absolutely full of Mom and Dad food. This pizza is the perfect end to a stressful day. And it’s pretty simple to make.
What you need:
- 8 slices of bacon, diced
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp black pepper
- 1 8oz package of cream cheese
- 1/4 cup sour cream
- 1 cup shredded mozz cheese
- 1/2 cup shredded Cheddar cheese
- 1/2 cup shredded Colby Jack cheese
- 1 jar Mazzetta jalapenos (the best)
- La Choy Sweet Chili Sauce
- 1 16-inch pizza dough pastry
What to do:
Prepare pizza dough according to package instructions. Our favorite dough to use is the Jiffy Pizza Dough.
Preheat oven to 400 degrees.
Fry diced bacon in a large skillet over medium heat until evenly browned. Try and leave a little undercooked because it will finish cooking on top of the pizza. Remove the back with a slotted spoon and set aside on paper towels.
Set aside two tablespoons of the grease and get rid of the rest. Put the 2 tbsp of bacon grease back in the pan and add the onions. Cook until soft, then add the garlic. Season with cumin, oregano, and black pepper. Add in cream cheese and sour cream. Mix until smooth.
Spread the mixture on top of the pizza dough. Top evenly with the cheeses. Sprinkle bacon on top, and added sliced Mazzetta jalapenos over the entire pizza.
Bake until crust is firm…around 30 minutes.
Drizzle with Sweet Chili Sauce and enjoy!
